Good morning! Hope you had a great Thanksgiving weekend. Mine was filled with lots of fun family time and so much delicious food.
-On Friday afternoon, we tried out a restaurant that just opened near us, b.good. It’s a small fast food chain that just opened its first location in NC, but all the ingredients are fresh and local at each location. The chefs came and grabbed the fresh veggies you can see behind the counter to chop and throw into their skillets, so they weren’t just props. There was a map on the wall showing where in North Carolina each ingredient came from– so cool!
I got a southwestern chicken salad, and it was a great option for a fast food place.
-I saw Mockingjay (again!), this time with my grandpa, brother, dad, grandma, and sister who hadn’t seen it yet.
My favorite guys!
-My cutest sister, Ris, is the sandwich master. She makes these giant, two-hands needed for eating, open-faced sandwiches. This is just half of the sandwich, but it had whole wheat bread, avocado, cucumber, tomato, deli turkey, red onion, and lettuce.
-We went to Winston’s Grille on Saturday night…
…And I got another southwestern chicken salad. I couldn’t help it because Winston’s makes my favorite restaurant salad! You know how some restaurant salads are basically just lettuce with squishy baby tomatoes, a sprinkle of cheese, and a few croutons? No, thanks. This one had a lettuce mix, black bean and corn relish, avocado, cucumbers, tomatoes, blackened chicken, and a chipotle sauce drizzle. I got it with their awesome honey mustard dressing on the side.
-We had some awesome dinners at home, too. This was one of my favorites– grilled chicken parmesan with whole wheat pasta. Love Rachael Ray’s recipes!
-And we took our family Christmas pictures– normally a torturous event, but they weren’t too bad this year. I even kept my eyes open for at least half of the pictures.
^^Christmas card, Mom?^^
Love my sister!
Hope you have a fabulous Monday! I’m back at school now, and I’ll have a new “healthy living” post up tomorrow morning.
Looks like a great weekend! b.good sounds awesome! I wonder if we have one of those in New York? I’ll have to check!
Yes! I love the idea of having fresh, real ingredients at fast food places. I hope there’s one near you!
