I absolutely love being away at school, but I had so much fun being home for a few days for Fall Break last weekend, too! I got to see friends from high school (and my old cross country coach!), hang out with my family, and do lots of cooking.
For my not-so-little brother’s 17th birthday, I took him out to lunch and to a movie. We saw The Maze Runner, which totally reminded us of the Hunger Games and Divergent movies. It’s worth seeing, at least on Redbox!
And I got to hang out with my sister and eat ice cream. (What else is new?) This was one of my all-time favorites, Double Dunker. It’s mocha ice cream with cookie dough and a chocolate cookie swirl…so basically heaven in a bowl. Let me know if you try it!

So, besides the people, one of the best things about being home from college is definitely the food. There’s an actual kitchen and free food magically appears in the fridge 😉
I made this roasted cauliflower pretty much every day while I was home. It’s one of my favorite things and it’s super easy to make! Just wash and dry one head of cauliflower (so it’ll be crispy and caramelized instead of soggy), chop into florets, lay them out on a baking sheet lined with parchment, sprinkle with salt, pepper, and garlic powder, drizzle with a teaspoon of olive oil (optional), and roast at 425° for 15-18 minutes.
One night, it was just my mom and me for dinner, so we made these Greek salads topped with lemon chicken. They were awesome! And we came up with this creamy salad dressing recipe using Greek yogurt. (I’ll post the recipe later!)
There were definitely some treats, too. I made these white chocolate toffee blondies from a recipe I got from my roommate’s mom. They were all kinds of amazing! You can find the recipe HERE.
And since it was my brother’s birthday, there was more dessert. I made Caleb an ice cream pie with Oreo crust, ice cream, and homemade fudge sauce. One side of the pan had coffee ice cream, and the other half had cookies ‘n’ cream. A house divided- the girls like coffee and the guys like cookies ‘n’ cream.
It was a great few days with my family filled with lots of amazing food- both healthy and decadent! And now I’m happy to be back at school in my “home sweet dorm.” Have a great Tuesday!
