Easy English Muffin Pizzas

With only 3 ingredients, a toaster, and a microwave, you can make mini pizzas in your dorm room in about 5 minutes. English muffin pizzas are so simple that I can hardly call this a recipe, but they’re a great snack or small meal.

English Muffin Mini Pizzas- the perfect healthy college lunch or snack! I like to have mine with veggies, Greek yogurt, or fruit.

As far as ingredients go, you just need an English muffin, some pizza or marinara sauce, and some cheese. I typically use mozzarella, but if I happen to have parmesan or ricotta on hand, I’ll use that, too. They’re completely customizable, so feel free to add sautéed veggies, pepperoni, or any of your other favorite pizza toppings.

I usually eat my English muffin pizzas with a side of carrot sticks, steamed veggies, fruit, or Greek yogurt for some extra protein. Hope you enjoy!

Easy Mini Pizzas

Prep Time: 1 minute
Cook Time: 2 minutes

Ingredients

  • 1 whole wheat English muffin
  • Pizza sauce
  • Mozzarella cheese (or ricotta/parmesan if you're feeling fancy!)

Instructions

  • Toast English muffin.
  • Spread pizza sauce onto the two halves of the English muffin. Sprinkle mozzarella cheese on top.
  • If using a toaster oven, place the two halves back in the oven under the broil setting for 1-2 minutes until cheese is melted (keep an eye on them). Otherwise, microwave just until melted. Enjoy!
